“We make the ice cream, we sell the ice cream, and we market the ice cream,” student Julia Garcia said.
FGCU just opened a student-run creamery on campus this year.
Webb Cheshire is the new FGCU creamery director. He retired from ice cream manufacturing and moved to Florida. But the idea of starting a college creamery kept churning in his mind.
“Next thing you know, I’m not retired anymore, and I am running a student-run business,” he said.
Webb and his team perfected recipes this summer before opening them to students.
“So we get our dairy base from here in Florida out of Saint Petersburg,” Webb said. “The bases with all the vanillas and fruits are also local. And then we pour into our hopper and in the turner, and we have.”
Students load the ingredients into the churner to make premium ice cream.
“It churns six quarts of ice cream in about 12 to 13 minutes,” he said. “We’ll have a batch of ice cream rolling out every 12 to 13 minutes.”
Garcia is one of the student workers who buys products and creates delicious batches.
“It’s a lot different than any other ice cream I’ve tasted before,” she said.
Her favorite is marketing the products.
“All the profits will go to student scholarships,” Webb said.
There are plans to expand the flavors and student jobs in the future.
